Ingredients:
- Small potatoes
- Extra virgin olive oil
- Salt
Brava vinaigrette:
- 50 ml sweet and sour Merlot Gardeny vinegar
- 50 g mayonnaise or aioli
- ½ tsp salt
- 1 tsp Tabasco (or other hot sauce)
- 1 tsp smoked paprika
:: Preparació ::
- Wash the potatoes thoroughly without peeling them.
- Blanch them in boiling water for 5 minutes.
- Dry and cut them into desired shape.
- Fry in olive oil until golden brown.
- Drain on paper towel.
- Sprinkle with a pinch of salt.
- Mix all the vinaigrette ingredients in a bowl until well combined.
- Serve the potatoes hot with the brava vinaigrette drizzled on top or on the side.
